This is why we make cookies, because of memories like this. Cookies shouldn't exist just because they can. There should be a reason behind them, something that makes us go "Ahhhhhh!" because we like something so much...because it brings back good memories we had as a care-free, cookie-eating kid.

This cookie is gluten-free, using a combination of different rice flours, and has loads of gluten-free oats, with handmade butterscotch mixed in. It also has your normal, run-of-the-mill butterscotch chips in it, just cuz.
