Gluten-Free Vegan Ancho Peanut Butter

It's spicy! But it's not like an "in-your-face-you-better-go-grab-yourself-a-firehose-that-shoots-milk-and-aim-it-at-your-mouth-to-get-rid-of-the-burning-or-maybe-just-a-glass-of-milk-cuz-a-firehose-shooting-milk-is-ridiculous"-type of heat. No, it's more of a slow, after-the-fact type of heat. It's strange. And adding ground coriander and lime zest helps with the "flavor profile", as fancy people say. Did I mention this cookie is gluten-free AND vegan, too?

White rice flour, sorghum flour, peanut butter, vegetable shortening, brown sugar, sugar, agave syrup, lime juice, xanthan gum, water, ground ancho chili, lime zest, ground coriander, baking soda, salt.
